Almanzo's Fried Apples 'n Onions

Almanzo said that what he liked most in the world was fried apples 'n onions.




Fry a couple pieces of bacon in a frying pan until crispy. Remove bacon from pan, crumble and set aside. In the bacon fat, add 1 medium onion, peeled and cut into 1 inch chunks. Cook until they start to soften, about 5 minutes. Add 4 tart cooking apples, cored and cut into 1 inch chunks. Cook 1 minute. Cover and cook 3-4 minutes more, stirring occassionally. Uncover and sprinkle with 2 Tab. brown sugar and the crumbled bacon. Serve hot.

  1. Oh, yes, I guess I forgot to mention that...they are delicious. It is a family favorite.

  2. I bet it isn't too different from the apple raisin stuffing my Dad used to make it had onion and of course bread crumbs but I bet the the result is similar.
