Making Corn Muffins from SCRATCH



You can really give your kids an appreciation of how hard life was for the Pilgrims and American Indians by having them grind their own corn for corn meal.
First have them shell Indian corn off the cob.
Next take a large flat rough stone and lay it down as your grind stone. Then take a smaller rough rock for your pestle. Have them grind the corn. One trick to it is to strike the corn kernels first to break them, then begin grinding them by rubbing the stone back and forth over the large broken pieces. It will eventually make a rough meal.
Your children will be amazed at how long it takes to grind a small amount of corn.

Take whatever you grind and add it to additional corn meal from the store for your favorite corn muffing or bread recipe.
(There is no reason to make this too uncomfortable!)
We sprinkled our freshly ground cornmeal on top of our muffins.
